We love the Latin cuisine of Palo Santo Chef-owner Jacques Gautier, as well as the ingenious wines of Channing Daughters’ Christopher Tracy. When we heard about the May 4th wine dinner at Palo Santo, we couldn’t have been more excited for this match made in heaven!

Long Island’s Channing Daughters Winery is most famous for its orange wines – a style of winemaking that Christopher Tracy personally introduced to Long Island’s East End. White wines have very little contact with the grape skins during the fermentation process, resulting in their light color. Orange wines are exposed to prolonged skin contact during the fermentation process to give them deep golden and pumpkin hues, while a little oxidation brings out an enticing nutty aroma.

In addition to a selection of orange wines, the May 4th wine dinner will also celebrate the anticipated release of the 2010 vintage rosé, a seamless pairing for Chef Jacques’ pan roasted bluefish with smoked bacon and pickled ramps!
