I remember growing up in Hawaii eating chili and rice, so I have a soft spot for chili. And being the carnivore that I am, barbecue is right up my alley, which brings me to the chili at Wildwood Barbeque. Oh my god! It’s spicy, rich, smooth, and everything you want from a chili. Big Lou, the chef at Wildwood, tells us that the secret is in the smoked brisket he adds. Tender and juicy, it’s definitely a welcome addition to the ground beef, onions, pinto beans, garlic and tomatoes. The ground ancho chile peppers, chili powder, cayenne and black pepper certainly add some heat, but not the type that burns; it’s restrained, but you feel the warmth as it goes down. Finally, the cumin and WildWood BBQ sauce just rounds this chili off with the perfect blend of spices and seasoning.
