The inaka soba at Matsugen is fabulously delicious! For those who enjoy noodles with texture, this is the buckwheat noodle for you. Inaka is the coarsest type of soba as the husk is blended into the noodles. With Matsugen’s inaka soba, the distinct buckwheat flavor can be savored and appreciated. Have it cold with my favorite dipping sauce, the goma dare (sesame sauce). The four accompanying ingredients — shredded shiso, grated ginger, sliced scallions and ginger shoots — each provide distinctive piquant flavors that make the sauce even more refreshing.
