I get giddy just thinking about the long list of imaginative specials that await me at Roebling Tea Room. While I’m always pleased with their specials, now a salad on their regular menu is a staple in my diet, the dandelion green salad. It’s a compilation of some of my favorite ingredients. Dandelion greens, celery root shavings, halved dates, feta, and grapefruit pieces are gently tossed in light citrus vinaigrette and arranged in a perfect mound. The large leafy greens are a mouthful while every other item contributes its individual flavor. The salty, crumbly feta complements the mushy sweet date, and is balanced by the delicate crunch of thin celery root disks. The grapefruit at the end refreshes your palate, preparing you for bite number two. There’s a lot going on here, so take your time and savor every detail.
Note: chicory replaces dandelion greens when out of season
