Smoked Fish Cobb Salad

The signature smoked fish Cobb salad at Petrossian is artfully prepared with the ingredients all lined in perfect rows atop a bed of mesclun, dressed with herb vinaigrette. There’s finely cut smoked fish – selection varies between salmon, sturgeon and trout — diced avocado, tomato, goat cheese, egg whites and crumbled crispy apple wood bacon and egg yolk. While I’m always afraid of Cobb salads being too heavy on the bacon and cheese, this one — with everything diced into delicate portions — is balanced and refreshing. Plus, the smoked fish adds a rich flavor while the texture is still light. I’ve never had a Cobb salad that tasted this good, and I’m so glad I found it though it’s only available for brunch on the weekends. While the café next door serves “the signature Cobb salad” every day, it’s a sad substitute lacking refinement as the ingredients are not diced and crumbled but cut in chunks. And instead of mesclun, it’s shreds of lettuce. Beware!
