I love potatoes every possible way they can be cooked, but the salt baked potato at Bar Breton is really something else. The skinned baked potato is filled with tender shredded braised oxtail and pieces of snail, and topped with a large Parmesan crisp. Potato is the perfect starch to soak up the rich and flavorful oxtail. It’s rare to see escargot out of its shell, but the snails, which give the dish a chewy lusciousness, don’t get lost in the mix. The Parmesan chip rounds off each bite with a crispy, savory kick. I love all the ingredients in this dish individually, and together they are even more wonderful.
