The tacos at Pinche Taqueria are just right — the ingredients fresh and balanced. Just a single flour tortilla dipped in the juice of carnitas (braised pork) is lightly grilled, making the tortilla harder to better hold the contents. I much prefer this method to the commonly used double tortillas, which I find throw off the proportion of starch to filling. The fish tacos are amazing! Fresh mahi mahi battered and fried, with shredded cabbage and cilantro mayo, plus cilantro, guacamole and onions — the staple toppings for all the tacos at Pinche. A slice of lime and radish come on the side. Like I said, everything here is just right, including the price: $2.75 per taco (add $1 for shrimp or fish).
