Carbonara is one of my favorite pastas, so I always enjoy trying different interpretations of it. Chef Michael White’s rendition at Convivio is my latest passion as the texture of the handmade pasta is fantastically springy, reminding me of Chinese hand cut noodles. The thick rectangular pieces of maccheroni have such a doughy texture that chewing them is fun and lets you really savor the taste of the pasta and the sauce. The rest of it is simply pancetta, pecorino, thin, long, elegant slices of scallion, egg and black pepper, but making it taste this good is not so simple.
