Decadence! There’s no better adjective to describe the deliciously rich lobster with coriander broth at Le Perigord. As the lobster melted in my mouth, I shuddered to imagine the deliciously rich ingredients that must comprise this exquisite concoction. Cilantro (a.k.a. young coriander) is sautéed with lobster heads, shallots, carrots, and leeks to start the base of the broth. Then comes white wine and emulsified butter. The broth is dangerously smooth, with the subtle pungency of cilantro that distinguishes it from classic French broths. I was only going to have a little taste, but one spoonful turned into another, and before I knew it I was looking at the bottom of the dish. Another adjective comes to mind: irresistible.
