There are lots of Southern goodies at Seersucker but the one side I cannot miss is the Hoppin’ John: black-eyed peas cooked with country ham, Carolina rice and Cheddar cheese. It’s not as heavy as it sounds, but it IS pure happiness. The country ham infuses the rice with a smoky flavor and the peas and Cheddar all harmonize together in a collectively rich aroma that will tickle from your taste buds to your tummy.
