Pickled Vegetable and Pork Bing
Wei Lu’s specialty is pickled vegetable and pork — that’s the stock base for their Northern Chinese-style hot pot. But you also can’t miss their pickled vegetable and pork bing. The pickled veggie is crunchy and tangy, contrasting the slightly fatty pork, and the bing (Chinese flatbread) is crisp on the outside but springy and doughy. I’m dying for one of these right now!
