Prosciutto and Pomelo
Pomelo is the most balanced and neutral-flavored citrus fruit. It’s not too tart like lemons and not too sweet like oranges, but perfectly juicy and mild. It’s the fruit of choice in Taiwan during the moon festival. Here, Uncle Ernest has masterly paired it with prosciutto. The pomelo cuts the saltiness of the meat without veering too far in the opposite spectrum of sweetness. It’s a subtle and winning touch.
