Pork Skin Jelly
Cyn recently took me to M&T in Flushing, a Chinese restaurant that serves Qingdao cuisine. Yes, the same place that’s known for the beer, Tsingtao. Here we have a jelly of pork skins, in which the pork skins are boiled so all the juices come out, then chilled so that it congeals into jelly. It’s then cut into pieces. The pork skins are still laden throughout the jelly. Great cold starter!
