As with many great inventions, the origins of Betony’s Seven Dwarves cocktail are a little murky (have a few drinks, and then think Williamsburg, knit caps, Scandinavia and Snow White). But its taste — the result of combining Linie aquavit, Ommegang wheat ale, house-made carrot soda, ginger and smoked honey — is clearly delicious. Here, Eamon Rockey, the cocktail’s inventor and Betony’s general manager, explains how it’s made.
