The Barefoot Contessa Foolproof

Celia Sin-Tien Cheng

The Barefoot Contessa strikes again — this time, with her eighth cookbook, “Barefoot Contessa Foolproof: Recipes You Can Trust.” Ina Garten is my favorite cookbook author because her recipes are easy to make, yet sophisticated and crowd pleasing. Garten explains what she means by “foolproof”: “Clearly, it means the recipe works….But there’s more to it than that. It’s a dish that’s deeply satisfying to eat; it’s a company-friendly meal that can be made in advance to reduce your stress; and it’s an outrageously delicious dessert that’s so easy to make that it becomes part of your regular repertoire.” Garten knows that the recipe itself is just one small puzzle piece in the big picture. I’m particularly excited about this new book because it is just in time for Thanksgiving, and all the recipes in the vegetables section — including green beans gremolata, orange-braised carrots and parsnips, truffled mashed potatoes, balsamic-roasted Brussels sprouts and mushroom and leek bread pudding — are perfect accompaniments to your Thanksgiving centerpiece. Plus, there’s a recipe for my biggest Achilles’ heel, pumpkin pie! We’re sharing Ina’s ultimate pumpkin pie with rum whipped cream recipe here to whet your appetite, but the whole book is a companion you’ll be happy to have by your side at Thanksgiving and other dinner parties year-round.
