I found the seasonal pasta on Dover’s recent tasting menu to be so mouth-wateringly delicious that I left dreaming of when I would return for more. From ingredients that signal the welcome arrival of spring — ramps, fava beans and English peas — to the comforting, freshly made egg noodles, the dish is a home run. And let’s not forget the essential ingredient that completes the dish: breadcrumbs. Dover, like its sister restaurant Battersby, has mastered using just the right amount of perfectly crunchy breadcrumbs to top its pastas. So much more than a mere sidekick, the breadcrumbs add essential contrast in texture to the silky smooth tajarin pasta. As the seasons change, so do the ingredients in Dover’s pasta, for which I have a year-round craving.
