Grand Central Oyster Bar’s signature dishes are the stews and pan roasts. All are made with a clam juice cream sauce, but the sweet chilli sauce in the pan roast turns the stew from white to red and gives it a kick. You can order either dish with oysters, Ipswich clams, cherrystone clams, shrimp, lobster, sea scallops, or, best of all, a combination. Executive Chef Sandy Ingber shares both recipes with us so we can recreate the dishes at home (see recipe boxes to the right), but what you can’t recreate is the grandiose, old school atmosphere that makes Grand Central Oyster Bar so distinct.
