This dish’s description on Dim Sum Go Go’s English menu is seriously insufficient. Look at the photo above. You can see that it’s so much more than “steamed pork with Chinese black olives.” It’s actually a steamed minced pork and shrimp patty, topped with a Chinese olive tapenade — a delicate, subtly complex dish. The shrimp adds flavor and texture to the finely minced pork. And the tapenade topping is so flavorful, that the dish pairs well with rice. As a kid, I was surprised to learn that us Shanghainese incorporate olives into our cuisine, too — and in the Chinese flavor palette, they will defy your Western expectations. This is a must-try!
