Everything on Marea’s menu is tempting, but I can never get past ordering the spaghetti with crab and sea urchin. To me, it’s perfection! The recipe sounds simple – sauté garlic, scallions and chili peppers, then add tomatoes, white wine, crab and sea urchin and toss with spaghetti – but the buttery flavor of the uni sauce, the springiness of the homemade semolina pasta and the tanginess of the tomatoes make for a complex flavor profile, each bite tastier than the one before. I’ll admit, it’s an addiction that I don’t want to kick.
