I grew up in Taipei, a culture obsessed with eggs. The finishing touch to our lunch boxes and breakfast hamburgers was always a fried egg. Of course, eggs are a staple for breakfast in most countries, but Dépanneur’s soft-boiled egg with rémoulade on a mini ficelle ($4) is a first for me. The crusty, skinny baguette from Balthazar is spread with Dépanneur’s own version of rémoulade (mayonnaise, hot sauce, parsley, tarragon vinegar and Dijon mustard). The delectable slices of soft-boiled egg peeking out from between the slices of crusty bread are a visual feast.
