Fluff Love
Whether you call it a Russian tea cake or a Mexican wedding cookie, I’m calling it my Fluff Love. When I ate these cookies while growing up in Hawaii, I had no idea what they were called, but I have always associated them with my carefree childhood and always loved lingering over their sweet crumbly taste. Empire Cake’s version ($20.00/lb) is so delightful. It’s like eating a bit of air. The texture of the cookie is light and fluffy, then you get flakes of pecan, which add another layer of texture. All that is covered with confectioner’s sugar for an extra coat of airiness. The powdery white finish is most befitting the traditional use of the cookies at weddings and Christmas.
