It was my son who first discovered and fell in love with this classic panino, every element of which is carefully chosen. The sweetness of the housemade mozzarella and fresh tomatoes cushions the salty jolt of a generous layer of prosciutto. Fresh basil leaves add color and brightness. Drizzled with a touch of balsamic vinegar and olive oil, the focaccia that bookends the filling (from Royal Crown in Bensonhurst) is not too thick and not too thin. It’s no wonder that when owner Leonardo Scarpone founded the shop 11 years ago, he added the “San” to “Panino” to invoke a patron saint of sandwiches. After tasting this one, you’ll be inclined to kneel down and offer thanks.
