Blanc de Blancs & Chicken Wings

It’s like this…yes, fried foods and creamy dishes go superbly with bubbles. But the key for me is a laser-sharp and nervy blanc de blancs to counterbalance the richness and grease. Recently, on champagne winemaker and owner Pascal Doquet’s first visit to New York City, he presented eight of his prized blanc de blancs (almost entirely from Premier and Grand Cru villages of the Côte de Blancs) at the bubbles-friendly Piora restaurant. The lineup showcased Doquet’s undivided attention to terroir expression and organic farming. The star pairing was Piora’s chicken wings with potato purée and a poached egg — a sophisticated take on this casual finger food. Magic happened in the mouth, proving once again that champagne is the ultimate meal enhancer!
