Before visiting Dosa Garden, I was familiar with dosa — a slightly crispy Indian fermented crepe — but not paper dosa. The waiter told me it was a “large” dosa, but I had no idea it would be over two feet long. Paper dosas are very thin, so they are “larger.” At Dosa Garden, the masala stuffing is made with potatoes, onions, lentils and spices. It’s a spicy, soft and smooth mash that goes well with the crispy thin dosa. The dosa is accompanied by a coconut chutney, a spicy tomato chutney and a wonderfully savory sambal — my favorite of the three. I thought I wouldn’t be able to get enough of the delicious paper masala dosa — but at that size, I actually did!
