Neue Cuisine

Since moving to New York more than a decade ago, I have always been enamored with Chef Kurt Gutenbrunner’s Austrian cuisine. His restaurants, Wallse, Café Sabarsky, and Blaue Gans are among my favorites. Chef Gutenbrunner not only cooks delectable food, but he is an artist in his own right, who appreciates art and design. His attention to detail is not only reflected in the presentation of his food, but also in his collaboration with Ronald Lauder to promote the art and cuisine at the Neue Galerie. He is an elegant tastemaker. All of this is reflected in his new cookbook, Neue Cuisine: The Elegant Tastes of Vienna. I am delighted that I now have at my fingertips “schnitzel secrets” and recipes to all my favorite dishes from his restaurants. These include veal schnitzel, fresh herbed quark spätzle and apple strudel. We are sharing all three recipes with you in our recipe boxes to the right.
