Morokyu is a combination of moromi miso and kyuri (cucumber). Moromi miso is a slightly sweet blend of barley grains and miso. Sushi Yasuda’s homemade moromi miso paste is the best I’ve ever had, including in Japan. It’s less sweet, and more savory with chunks of garlic and minced chicken that make it more flavorful. This is a light and incredibly refreshing starter that can’t be missed.
