If you can have only one meal in Santa Fe, Café Pasqual’s is where you must go, whether for breakfast, lunch, dinner or brunch. It’s a low-key neighborhood joint, but its reputation has reached far and wide in the gastronomic community. For dinner, the waiter recommended the mole enchiladas — hands down, no competition — a staple on the menu for over 20 years. We ordered the chicken, over the tofu option. Until visiting Café Pasqual’s, I never really liked mole, but I knew that I had never had really good mole. Now I can truly say that really good mole is out of this world. When I tasted it, I was immediately wowed, and then as the flavors lingered on my palate, I could detect the complexity and savor each layer of its sweetness, of its spiciness, and on and on. It’s served with clean and simple cilantro rice, an orange jicama salad that’s refreshing as a palate cleanser, and a slice of fresh corn torte — cornbread so fresh, fragrant and sweet, I wish I could have it every day. Café Pasqual’s home-style breakfast dishes are equally astonishing and delicious. Below is a photo of the smoked trout hash, which is beautifully presented but tastes even better than it looks.
