The “minute-steamed tai” is four small pieces of New Zealand sea bream, quick steamed, so it’s still slightly raw inside, topped with ginger, scallion and oil. It’s ingenious to use traditional Chinese fish preparation — steamed with ginger, scallion, oil and soy sauce — to prepare sashimi with a twist. My mouth continued to water even as I was eating it.
