Coyote Café has two parts to it, the formal restaurant known as the Café Dining Room that’s only open for dinner and the more casual rooftop Cantina that’s open all day. After arriving in Santa Fe, we hopped over to Coyote Café Cantina for a late lunch, and even at close to 3 p.m. it was bustling! The Mexican white shrimp ceviche tostadas jumped out at me on the menu, with the jalapeño yuzu lime marinade, avocado, cucumbers and baby radish. The shrimp arrived fresher than I imagined and couldn’t have been a better pairing with the green chile margarita (that had some serious heat to it). The Cantina has a great festive atmosphere and the dining, while casual, is very decent. It is the ideal spot for lunch and happy hour!
