Artisanal condiments finally seem to be in the limelight. Why hasn’t anyone thought of this before? Once I opened my first jar of black garlic Empire Mayonnaise there was no turning back. Chef Sam Mason and designer Elizabeth Valleau have created an adventurous line of flavored and classic mayonnaise, including malt vinegar, smoked paprika, rosemary, lime pickle, white cheddar and vadouvan. Every sandwich I make now has an added dimension of flavor. You can find Empire Mayo at gourmet food stores like Murray’s Cheese or Bklyn Larder, but sometimes the selection is limited, so I’m excited that they just started selling online. These are fun to give as gifts, but it’s also understandable that you might end up hoarding them for yourself. I won’t tell.
