Chef Liz Johnson is so incredibly talented, and young! I had the pleasure of meeting her and her boyfriend (at the time, now fiancé) Will Aghajanian in San Sebastian — they sat at the table across from mine at Ibai for lunch — before she became the darling of the New York restaurant scene. I’ve been overjoyed to see her do so well. Liz and Will have since left Mimi, which I think was the right decision since the restaurant doesn’t have the kind of service or vision that deserves Liz’s talents. They have kept her menu, but have been unable to create new dishes since she was the creative heart and soul of the restaurant. This was one of my favorite dishes there last summer — a little late, I know. But giving credit where it’s deserved.
