One of Cynthia’s favorite Chinese dishes is lion’s head — Chinese meatball. It’s usually served in rich chicken broth with bok choy. Total comfort food. Rong Rong Yuan’s meatball is unbelievably tender. Is it the pork? Do they add tofu? What’s the secret?
