Luis Illades, owner of Urban Rustic, started making lemonade when a friend needed to bring a bottle of “something” to a dinner party with some non-drinkers. He packaged his first batch in a 750-ml bottle — an innocent nod to wine. Soon, he started selling the lemonade (big bottle ($6); small ($4)) at his shop and its popularity spurred his enthusiasm. He went rampant with new flavors — everything from kale to tart cherry, with cucumber, ginger and red pepper to boot! I can never have a run of the mill lemonade again…
