Kimchi pajun has always been my favorite pajun (pancake) because unlike most other types, it benefits from sauce but doesn’t rely on it. The kimchi pajun at Pan is great because it features the kimchi front and center — a good thing because it’s well fermented and full of flavor. The sourness and heat of the kimchi is perfectly complemented by the fried batter. It’s a lovely combination of chewiness and crispness and is great as part of a meal or just as anju (food to accompany drinking). The soy-based dipping sauce is a mini-cocktail of its own and should not be overlooked. There are many great dishes at Pan, but I highly recommend the kimchi pajun.
