Pie Corps is celebrating its first anniversary this month, and the two partners in this venture, Cheryl Perry and Felipa Lopez, deserve a big pat on their backs for starting a company that makes seriously delicious pies from scratch with a focus on using local and seasonal ingredients. The savory and sweet pies range from hand pies to pot pies and lollipop pies. The hand pies are flaky pastry pockets with fillings like curried potato and pea, parsnip-potato brandade, and caramelized onion and goat cheese. The popular stout beef and chicken pot pies are marvelous comfort foods. There are also tart-like (or quiche-like) egg-based pies. The pie flavors change seasonally, though Cheryl and Felipa seem to play around each week with certain variations. For example the mushroom pie changes frequently.
