There’s just something about egg in dumplings! (This theory is echoed in the Mimi Cheng’s breakfast dumpling craving.) For my birthday party last year, I ordered 250 frozen dumplings from Dumpling Galaxy and cooked them at home, pan-frying the ones with meat in them and steaming the rest. I’ve tried about 25 different varieties now — Dumpling Galaxy boasts over 100 — and the ones with egg in them are my favorites: egg and tomato, thousand-year egg and lean pork, and duck egg yolk and pine nuts. While I don’t recommend eating at the restaurant because of the lack of service and uncomfortable Flushing shopping mall atmosphere, I do recommend buying them frozen and making them at home — the dumpling party was a huge hit.
