I’m not one for exaggeration but I love when my enthusiasm exceeds my expectations. And I must say that the DKA (Dominique’s kouign amann) at Dominque Ansel Bakery is simply outrageous — outrageously delicious and decadent. Even for someone who doesn’t have a sweet tooth, these Breton butter breads are simply addictive. They’re made with croissant dough and an enormous amount of butter and sugar layered throughout. When baked, the sugar on the outside caramelizes, creating a crispy texture, while the inside stays moist, chewy and almost gooey. Pastry chef Dominique Ansel has won awards for these signature pastries, which are similar in size and shape to a croissant unlike the usual round tart-like cake common in Brittany. This is one of those pastries that you won’t be able to live without once you’ve had your first bite.
