Vinegar Hill House’s menu is full of delicious surprises that are always changing. But for dessert, it’s hard to pass on a house signature, the Guinness chocolate cake. A good rich, moist chocolate cake can sell itself, but adding Guinness and topping it off with cream cheese frosting brings legions of devoted fans. The alcohol from the Guinness stout evaporates through the process of baking, so while the cake doesn’t taste of alcohol, it does retain a tangy twist. The slight acidity in the cream cheese frosting also cuts through the density of rich, deep chocolate flavor, imparting balance and making it taste lighter than it actually is — an illusion I’ll gladly hang on to, as long as it permits me have another slice.
