Ramen Yebisu in Williamsburg has a short menu, but it covers a breadth of flavors from miso, shoyu and shio to dry ramen, all done well — especially the signature Yebisu ramen that has a seafood-based broth with prawn, scallops, snow crab, mussels and seaweed. It is also the most expensive item on the menu at $17. For half the price, and a less heavy meal, the abura soba is a good choice. Similar to the dry mixed noodles that Yuji Ramen serves, abura soba is soupless, and here served with roasted pork, bamboo shoots, scallion, roasted liver, poached egg, lobster oil, seaweed and sesame seeds. Mixed together, it’s full-body in flavor but light on the palate. In fact, once you’re done, you might be thinking about another bowl.
