Jamie Oliver’s Meals in Minutes

I grew up with a father who’d slave away in the kitchen all weekend long because he loved to cook. So I very much appreciate meals that one has to toil over. However, during the week, when we’re all strapped for time, I turn to my other chef mentor, Jamie Oliver. His latest cookbook, Jamie Oliver’s Meals in Minutes, is a compilation of 50 meals that can each be prepared within 30 minutes — yes, complete meals! It’s a lifesaver because I am always scrambling for sides at the last minute, and these recipes include an entrée, a side and a dessert — truly thoughtful and helpful. Oliver teaches us that it’s not about compromising quality, but simply being organized! And it really can be done! Yes. Yes. Yes!

Here’s an example meal: Thai red shrimp curry, jasmine rice, cucumber salad, and papaya platter that serves four. Click on the recipe box to the right.
