Wow! The pumpkin éclair at Maison Kayser is my favorite dessert of the season. Simple and elegant. Neither over-sweetened nor over-spiced. The cream filling of pumpkin purée, spiced with the slightest hint of cinnamon and ginger, is beautifully piped between choux pastry that’s coated in powdered sugar and crushed almonds. The cream is not overly sweet, allowing the pure, earthy pumpkin flavor to speak for itself. The crushed almonds complement the pumpkin and add a bit of crunch and nuttiness to contrast the silky smooth cream, a combination that hits just the right spot. These babies sell out fast, so either get to a Maison Kayser early — there are now four in the city — or call to reserve yours ahead of time. Bon appétit!
