Morel Rice Topped with Gobo Chips

Kajitsu, the Japanese vegetarian restaurant in the East Village, is my new favorite restaurant. The artistry of the Kyoto-style cuisine is impressive. I love all the intricately prepared courses at Kajitsu, but my favorite is always the final course of rice and pickles. This month, it’s gobo (burdock root) chips topped steamed rice with morel mushrooms.
