Yuba Sashimi

Another highlight at Cocoron is the fresh homemade yuba — tofu skins. You can order it as an appetizer or with tsukemen – cold noodles to be dipped in hot broth. Both options are delightful! As an appetizer, the yuba sashimi is accompanied by soy sauce and wasabi. As part of the tsukemen, the yuba should not be left in the boiling broth for too long or it will melt back into its original soy milk state. Still, it’s wonderful when the yuba infuses the hot tsukemen broth with its soy milk flavor.
